This Air Fryer Spaghetti Squash is the perfect healthy side dish! Light, tender, and ready in under 30 minutes, it’s a delicious low-carb option that’s great for summer meals.
Ingredients

1 medium spaghetti squash (about 2½ to 3 pounds)

1 tablespoon olive oil (or spray oil)

Salt and pepper, to taste
Optional toppings:

Fresh herbs (basil, parsley, chives)

Grated Parmesan cheese or nutritional yeast

Balsamic glaze drizzle

Red pepper flakes
Instructions

Cut the Squash
Carefully slice the spaghetti squash in half lengthwise. Use a spoon to scoop out seeds and stringy bits. -
Season
Brush or spray the inside of each half with olive oil. Sprinkle generously with salt and pepper. -
Preheat Air Fryer
Preheat your air fryer to 375°F (190°C) for 3–5 minutes. -
Cook the Squash
Place the squash halves cut side down in the basket.
Air fry for 18–22 minutes, or until tender and easily pierced with a fork. -
Scrape and Serve
Let cool slightly. Then use a fork to gently scrape the flesh into spaghetti-like strands.
Top with your favorite seasonings and serve warm!
Notes
To soften the squash for easier cutting: Microwave for 2–3 minutes before slicing.
Storage: Store leftover strands in an airtight container in the fridge for up to 5 days.
Freezing: Freeze cooked strands for up to 3 months. Thaw in the refrigerator overnight before reheating.
