Description

Baked feta eggs combine creamy feta cheese, roasted tomatoes, and gently baked eggs in one flavorful dish. Perfect for brunch, this easy recipe is satisfying and simple to customize.


Ingredients

2 cups cherry or grape tomatoes

1 red bell pepper, diced

½ small red onion, diced

3 cloves garlic, minced

8 ounces feta cheese

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon sea salt

½ teaspoon dried thyme

½ teaspoon ground black pepper

½ teaspoon red pepper flakes

1 cup chopped baby spinach

4 large eggs

Optional toppings: chopped fresh basil or fresh chives


Instructions

1. Preheat oven to 400°F (200°C).

2. If using ramekins, divide tomatoes, pepper, onion, garlic, and feta among four dishes. Drizzle 1 tablespoon olive oil over each.

3. If using a single baking dish, combine tomatoes, pepper, onion, and garlic. Place feta in the center and drizzle with all olive oil.

4. Mix oregano, salt, thyme, black pepper, and red pepper flakes in a small bowl. Sprinkle spice mix evenly over veggies and feta.

5. Place ramekins on a baking sheet or place the large dish directly in the oven. Bake for 25 minutes.

6. Remove from oven. Stir to combine, then stir in chopped spinach.

7. Make a well in the center of each dish or four in the large dish. Crack in the eggs.

8. Return to oven and bake for 10 more minutes, or until egg whites are just set.

9. Top with optional fresh herbs. Serve warm with toast, pita, or baguette.

Notes

Use block feta for the creamiest texture.

For firmer yolks, bake 12 to 14 minutes instead of 10 after adding eggs.

Can be made in advance and reheated at 350°F for 10 minutes.

Add chopped olives or mushrooms for extra flavor.
