Description

Buffalo Chicken Grilled Cheese is the ultimate spicy, cheesy sandwich—packed with shredded chicken, blue cheese, ranch, and hot sauce between crisp, buttery bread.


Ingredients

8 slices sandwich bread

2 cups cooked chicken breasts, shredded

2 teaspoons minced garlic

1/4 teaspoon cayenne pepper (optional)

1 teaspoon ground black pepper

1/2 teaspoon paprika

1/2 cup Frank’s hot sauce

1/2 cup ranch dressing (store-bought or homemade)

4 oz cream cheese, softened

4 tablespoons crumbled blue cheese

48 slices Muenster cheese

4 tablespoons butter


Instructions

1. In a small bowl, combine cream cheese, blue cheese, paprika, black pepper, and cayenne. Stir until smooth. Set aside.

2. In another bowl, mix shredded chicken, hot sauce, ranch dressing, and minced garlic until well coated.

3. Butter one side of each bread slice. On the other side, spread the cheese mixture onto four slices.

4. Top each with the buffalo chicken mixture, then layer on 1–2 slices of Muenster cheese. Close the sandwich with the remaining bread, butter side out.

5. Heat a large skillet over low heat. Spray with cooking spray. Grill each sandwich for about 5 minutes per side or until golden brown and the cheese has melted.

6. Serve hot with extra buffalo sauce, ranch, or blue cheese dressing if desired.

Notes

Use rotisserie chicken to save time and add flavor.

If you prefer a spicier sandwich, add jalapeño slices or more cayenne pepper.

Don’t overfill the sandwich, or it may fall apart during cooking.

Low heat ensures the bread crisps while the cheese melts completely.
