Description

This cauliflower mac and cheese is creamy, cheesy, and perfect for cozy weeknights or holiday sides. A low-carb twist on a comforting classic, it’s made with tender cauliflower florets and a rich homemade cheese sauce, then baked until bubbly and golden.


Ingredients

1 medium head cauliflower, cut into florets

2 cups shredded cheddar cheese

1/2 cup cream cheese, softened

1/2 cup milk

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon paprika (optional, for extra flavor)

1/4 cup breadcrumbs (optional, for topping)


Instructions

1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.

2. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5–7 minutes until tender but still firm. Drain and set aside.

3. In a medium saucepan over low heat, combine the cream cheese, milk, garlic powder, onion powder, and paprika. Stir until smooth and heated through.

4. Gradually add the shredded cheddar cheese and Parmesan cheese, stirring until melted and creamy.

5. In a large bowl, combine the cooked cauliflower with the cheese sauce. Stir gently to coat the cauliflower evenly.

6. Pour the mixture into the prepared baking dish. If using, sprinkle breadcrumbs evenly over the top.

7. Bake for 20–25 minutes, or until bubbly and golden.

8. Let cool for a few minutes before serving.

Notes

For extra flavor, toast breadcrumbs in a bit of butter before topping.

Drain cauliflower thoroughly to prevent a watery bake.

Try smoked paprika or hot sauce for a spicy variation.
