Description

Cheesy, saucy, and classic Tex-Mex comfort food you can make in 35 minutes.


Ingredients

  • 12 corn tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) enchilada sauce
  • 1 cup diced onions (optional)
  • 1 can (15 oz) black beans, rinsed and drained (optional)
  • 1 cup sour cream (for serving)
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Warm tortillas for 30 seconds each side to make pliable.
  3. Spread a little enchilada sauce in a baking dish.
  4. Fill each tortilla with cheese, beans, and onions.
  5. Roll and place seam-side down in dish.
  6. Cover with remaining sauce.
  7. Top with remaining cheese.
  8. Bake 20–25 minutes until bubbly.
  9. Cool slightly before serving.
  10. Serve with sour cream and garnish.

Notes

You can prep this ahead and refrigerate before baking. Great with rice, beans, or salad.
