Description
Cheesy, saucy, and classic Tex-Mex comfort food you can make in 35 minutes.
Ingredients
- 12 corn tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 can (10 oz) enchilada sauce
- 1 cup diced onions (optional)
- 1 can (15 oz) black beans, rinsed and drained (optional)
- 1 cup sour cream (for serving)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Warm tortillas for 30 seconds each side to make pliable.
- Spread a little enchilada sauce in a baking dish.
- Fill each tortilla with cheese, beans, and onions.
- Roll and place seam-side down in dish.
- Cover with remaining sauce.
- Top with remaining cheese.
- Bake 20–25 minutes until bubbly.
- Cool slightly before serving.
- Serve with sour cream and garnish.
Notes
You can prep this ahead and refrigerate before baking. Great with rice, beans, or salad.
