Ingredients
2 cups cooked chicken, shredded
1/2 cup mayonnaise
1/4 cup Greek yogurt (optional for creaminess)
1/4 cup celery, finely chopped
1/4 cup red grapes, halved
1/4 cup walnuts, chopped (optional)
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt and pepper, to taste
4 slices of whole grain or white bread
Lettuce leaves for serving
Instructions
In a large bowl, combine the shredded chicken, mayonnaise, and Greek yogurt. Mix until the chicken is well coated.
Add the chopped celery, halved grapes, and chopped walnuts to the chicken mixture. Stir gently to combine.
In a small bowl, whisk together the Dijon mustard, lemon juice, salt, and pepper. Pour this dressing over the chicken salad mixture and combine well.
Taste and adjust seasoning if necessary. Chill the chicken salad in the refrigerator for at least 30 minutes to let the flavors meld.
To serve, place a generous scoop of chicken salad between two slices of bread. Add lettuce leaves for a fresh crunch.
Notes
For a gluten-free option, serve the chicken salad in lettuce wraps instead of bread.
