Description

Ingredients

12 oz pasta (fusilli or penne)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup bell pepper, diced
1/2 cup red onion, finely chopped
1/2 cup black olives, sliced
1 cup mozzarella balls, halved
1/4 cup fresh parsley, chopped
1/3 cup olive oil
2 tbsp red wine vinegar
1 tsp Italian seasoning
Salt and pepper to taste


Instructions

Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, black olives, mozzarella, and parsley.
Add the cooled pasta to the bowl with the vegetables.
In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
Pour the dressing over the pasta salad and toss until everything is well coated.
Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

For a gluten-free version, use gluten-free pasta.
Feel free to add other vegetables like spinach or artichokes.
