Description
Firecracker Chicken Skewers are juicy, bold, and packed with flavor from a spicy-sweet marinade. Quick to grill and easy to prep ahead, they’re perfect for weeknight meals or backyard cookouts.
Ingredients
1.5 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
2 tbsp fresh garlic (minced)
1 large red bell pepper (cut into chunks)
1 medium zucchini (sliced into thick rounds)
1/4 cup low-sodium soy sauce
2 tbsp honey
1 tsp red pepper flakes
Instructions
1. In a large bowl, combine soy sauce, honey, minced garlic, and red pepper flakes.
2. Add chicken cubes to the marinade, cover, and refrigerate for at least 30 minutes.
3. Meanwhile, chop the red bell pepper and zucchini.
4. Thread marinated chicken and vegetables onto skewers alternately.
5. Preheat the grill to medium-high heat and grill skewers for about 10-12 minutes, turning occasionally until cooked through.
6. Serve hot with any leftover marinade drizzled on top.
Notes
Marinate longer for deeper flavor, up to overnight.
Soak wooden skewers in water to prevent burning.
Serve with rice, salad, or flatbread.
Leftover skewers reheat well in the oven or air fryer.
