Ingredients
8 oz whole wheat pasta (fusilli or penne)
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced (red or yellow)
1/2 red onion, finely chopped
1 cup Kalamata olives, pitted and halved
1 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, feta cheese, and parsley.
In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
Add the cooled pasta to the vegetable mixture and pour the dressing over the top. Toss everything gently until well combined.
Taste and adjust seasoning if necessary. Serve immediately or refrigerate for at least 30 minutes to allow flavors to meld.
