A refreshing grilled corn salad recipe perfect for summer gatherings, packed with flavors and easy to make.
Ingredients
4 ears of corn, husked
1 red bell pepper, diced
1 small red onion, finely chopped
1 cup cherry tomatoes, halved
1 avocado, diced
1/4 cup fresh cilantro, chopped
1 lime, juiced
3 tablespoons olive oil
Salt and pepper to taste
Instructions
Preheat your grill to medium-high heat.
Husk the corn and brush it lightly with olive oil. Season with salt and pepper.
Place the corn directly on the grill and cook for about 10-15 minutes, turning occasionally until charred and tender.
Once grilled, remove the corn from the grill and let it cool slightly before cutting the kernels off the cob.
In a large mixing bowl, combine the grilled corn kernels, diced red bell pepper, chopped red onion, halved cherry tomatoes, diced avocado, and chopped cilantro.
In a separate bowl, whisk together the lime juice and olive oil. Pour over the salad mixture and toss gently to combine.
Season with additional salt and pepper as needed, then serve immediately for a fresh taste!
Notes
For a creamier salad, add more avocado.
You can substitute lime juice with lemon juice if preferred.
Feel free to add other vegetables like cucumbers or radishes.
