Ingredients

1 bell pepper, diced
1 zucchini, sliced
1 red onion, cut into chunks
1 cup cherry tomatoes
1 cup mushrooms, halved
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 teaspoons garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
Skewers (wooden or metal)


Instructions

Preheat your grill to medium-high heat.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a large mixing bowl, combine the diced bell pepper, zucchini slices, onion chunks, cherry tomatoes, and halved mushrooms.
In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper to create a marinade.
Pour the marinade over the vegetables and toss until evenly coated.
