Ingredients
1 cup peanut butter (creamy or chunky)
1/2 cup honey or maple syrup
2 cups rolled oats (gluten-free if needed)
1/2 cup chocolate chips (optional)
1/4 cup chopped nuts (optional)
1/4 cup shredded coconut (optional)
1 teaspoon vanilla extract
Pinch of salt
Instructions
In a large mixing bowl, combine the peanut butter and honey until well mixed.
Add in the rolled oats and mix until evenly coated.
Stir in the chocolate chips, nuts, coconut, vanilla extract, and salt.
Transfer the mixture into a lined 8×8 inch baking dish and press down firmly.
Refrigerate for at least an hour until set, then cut into bars.
Store in an airtight container in the fridge for up to a week.
Notes
For a sweeter bar, feel free to add more honey or maple syrup.
