A refreshing pasta salad with Italian dressing perfect for any meal. Quick, easy, and full of flavor!
Ingredients
8 oz. of rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup black olives, sliced
1 cup mozzarella balls, halved
1/2 cup Italian dressing (store-bought or homemade)
Salt and pepper to taste
Fresh basil leaves for garnish (optional)
Instructions
Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, and mozzarella balls.
Drizzle the Italian dressing over the salad and toss gently to coat all the ingredients evenly.
Season with salt and pepper to taste. Adjust the seasoning if needed.
Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
Before serving, give the salad a good toss and garnish with fresh basil leaves if desired.
Notes
You can add additional vegetables like bell peppers or spinach for more nutrition.
For a spicier version, consider adding sliced jalapeños or red pepper flakes.
