Ingredients
2 cups fresh peaches, pitted and diced
1 tablespoon lemon juice
1 teaspoon cinnamon
1 cup all-purpose flour
1 cup rolled oats
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a mixing bowl, combine the diced peaches with lemon juice and cinnamon. Set aside.
In another bowl, mix together the flour, oats, brown sugar, granulated sugar, baking powder, baking soda, and salt.
Stir in the melted butter, egg, and vanilla extract until just combined.
Press half of the mixture into the bottom of the prepared baking dish to form a crust.
Spread the peach mixture evenly over the crust.
Crumble the remaining oat mixture over the peaches.
Bake for about 30-35 minutes, or until the top is golden brown and the peaches are bubbling.
Allow to cool before cutting into bars and serving.
Notes
For a vegan version, substitute the egg with flaxseed meal.
Use a mix of different fruits for a unique flavor.
