Description

Poolside Quesadilla Wedges are a crispy, cheesy snack perfect for summer gatherings. Simple to make and easy to serve, they’re a delicious addition to any backyard party or laid-back hangout.


Ingredients

4 large flour tortillas

2 cups shredded Monterey Jack and Cheddar cheese blend

1 cup diced bell peppers (mixed colors)

1 cup cooked chicken, diced (optional)

2 tbsp olive oil

1/2 cup sour cream

2 tsp hot sauce


Instructions

1. Preheat your grill to medium heat.

2. In a bowl, mix the shredded cheese, diced bell peppers, and cooked chicken (if using).

3. Place one tortilla on a clean surface, sprinkle half of the filling over one side, and fold it in half.

4. Brush both sides of the folded quesadilla with olive oil and place it on the grill.

5. Grill for 3–4 minutes per side until golden brown and crispy.

6. Remove from heat, let cool slightly, then cut into wedges.

7. Serve hot with a dipping sauce made from sour cream mixed with hot sauce.

Notes

Use freshly grated cheese for the best melt.

Swap chicken for black beans or mushrooms for a vegetarian version.

Great to prep ahead and grill just before serving.
