Ingredients
2 cups fresh strawberries, hulled and sliced
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
1 cup crushed shortcake or sponge cake
Mint leaves for garnish (optional)
Instructions
In a bowl, combine the sliced strawberries with granulated sugar and 1 teaspoon of vanilla extract. Set aside to macerate for about 30 minutes.
In another bowl, whip the heavy cream with powdered sugar and 1 teaspoon of vanilla extract until soft peaks form.
Take your serving cups or bowls and layer the crushed shortcake or sponge cake at the bottom.
Add a generous layer of the macerated strawberries on top of the cake.
Spoon the whipped cream over the strawberries, filling the cup to the top.
Repeat the layering process if your cups are large enough, finishing with whipped cream on top.
Garnish with fresh mint leaves if desired. Serve immediately or chill briefly before serving.
