Ingredients
8 oz. rotini pasta
1 lb ground beef or turkey
1 packet taco seasoning
1 can black beans, drained and rinsed
1 cup corn, frozen or canned
1 bell pepper, diced
1 1/2 cups cherry tomatoes, halved
1/2 cup red onion, diced
1 cup shredded cheese (cheddar or Mexican blend)
1 cup sour cream or Greek yogurt
1/4 cup salsa
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, cook the ground beef or turkey over medium heat until fully cooked. Drain excess fat.
Add the taco seasoning to the meat along with 1/4 cup of water. Stir and let simmer for 5 minutes.
In a large bowl, combine the cooked pasta, seasoned meat, black beans, corn, bell pepper, cherry tomatoes, red onion, and cheese.
In a separate bowl, mix together the sour cream and salsa until well combined. Pour over the pasta mixture and gently toss to combine.
Season with salt and pepper to taste.
Garnish with fresh cilantro if desired. Serve immediately or refrigerate until ready to serve.
Notes
This salad can be made vegetarian by omitting the meat and using extra beans.
Feel free to add your favorite taco toppings like avocado or jalapeños.
