Description

This Bang Bang Chicken Bowl is a bold and comforting meal featuring juicy chicken, crisp veggies, and a creamy, spicy-sweet bang bang sauce served over rice. Ready in under 30 minutes.


Ingredients

1 lb boneless, skinless chicken breast

1 cup cooked rice (white, brown, or cauliflower)

1 cup mixed veggies (broccoli, bell peppers, carrots)

2 tablespoons olive oil

Salt and pepper to taste

1/2 cup mayonnaise

2 tablespoons sriracha

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon lime juice


Instructions

1. Cook your rice according to package instructions and set it aside.

2. Cut chicken into bite-sized pieces and season with salt and pepper.

3. Heat olive oil in a skillet and sauté chicken until golden and fully cooked.

4. In a bowl, mix mayonnaise, sriracha, honey, garlic powder, and lime juice to make the sauce.

5. Add veggies to the skillet and cook for 2-3 minutes until tender-crisp.

6. Pour the sauce over chicken and veggies, stirring to coat everything evenly.

7. Serve the mixture over cooked rice.

8. Garnish with green onions, sesame seeds, or extra sriracha as desired.

Notes

You can substitute shrimp or tofu for the chicken.

Use cauliflower rice for a lower-carb option.
